Homebrew allows you to install Gaphor as a Cask. Those instructions you can use to bump the Gaphor version served.
For starters you'll need set up your own homebrew casks repository.
To see if there's a new version available:
brew livecheck --cask gaphor
To create a PR:
brew bump-cask-pr gaphor --version <new-version>
A PR should have been created.
