The first question to consider: Where in the user guide would be a good place for this? How about adding this new section between Intervals and Scatters to the categorical data chapter?

Is there some code sample that explains how subplot() works? Since it's not included in the documentation, I am a bit confused how it actually works

I am not sure we want to document / advertise subplot just yet. AFAIK it is still a concept under design/development and not fully baked cc @mattpap

@tcmetzger right that example was meant to illustrate categorical coordinates. If we update it to use subplots (I think there is a demo script in the original PR?) then we would still need some good example to demonstrate categorical coords. Or maybe two versions of this same plot to contrast?
