Add user guide section about sub-coordinates/subplots #12073

The first question to consider: Where in the user guide would be a good place for this? How about adding this new section between Intervals and Scatters to the categorical data chapter? |

@BhaswatiRoy https://docs.bokeh.org/en/latest/docs/examples/plotting/polar_subcoordinates.html might be a good starting point, but I might be wrong - it has been a while since I started this issue. @bryevdv do you have any pointers? Seems like the ridgeplot example isn't using |

@tcmetzger right that example was meant to illustrate categorical coordinates. If we update it to use subplots (I think there is a demo script in the original PR?) then we would still need some good example to demonstrate categorical coords. Or maybe two versions of this same plot to contrast? |
Based on the discussion in #12068, I noticed we don't have a user guide section explaining the functionality used in that example. We should add information about
subplot()
