I'm trying to find the AUR package for openspades but it says it's missing. Was it removed? I recall it was there before.

Usually git is building from the latest uploaded source. and a normal version is a released binary, no building required.

The best is to contact the proper arch aur maintainer (the openspades package you mentioned might have been dropped for a reason e.g. maintainer issue etc) or using snap on arch possibly https://snapcraft.io/install/openspades/arch.

According to the wayback machine the maintainer was Grelek, do you happen to know him, if you do, do you have any contact info?

absolutely no idea, maybe try to contact the openspades-git maintainer ? he surely knows a lot more informations on this than I do.
