Ones I can think of off the top of my head:

Test towncrier (probably as part of the doc build), i.e. assert the changelog is in the docs.
test package extra deps extras are defined properly
Run pre-commit on the rendered templates

Look at the Open Astronomy tests for examples and how we're going to go about doing it
