Add contextual logging support in Docs API V2

Based on the quarkusio/quarkus#22724 being done, we can add the contextual logging information for the each HTTP request. We need to think that data would we like to be inserted, but we should definitely consider adding tracing ids, tenant ids, etc.

This should be a common stuff that could be applied to any Quarkus based service.
