Switch back to using composer module after Ansible 2.10.4 is released #52

Currently there's a bug in Ansible core that causes the composer module to not be idempotent with Composer 2+, so I switched in #51 to the command module. I'd like to switch back to the composer module though, so I set up this issue to track progress getting back to it.
